Start your day with these delicious and nutritious spinach waffles topped with savory saut ed mushrooms and perfectly fried eggs. This recipe is a delightful twist on traditional waffles, packed with flavor and wholesome ingredients.
Ingredients:
- 200g fresh spinach
- 200g self-raising flour
- 1 tsp baking powder
- 2 large eggs
- 300ml almond milk
- Salt and pepper to taste
- 1 tbsp olive oil
- 200g mushrooms, sliced
- 4 large eggs for frying
- Fresh parsley for garnish
Instructions:
First, make the spinach soft
Cover it with a plate and put it in a bowl that can go in the microwave
Microwave for two to three minutes, or until it wilts
Remove any extra water and chop the food very small
Self-raising flour and baking powder should be mixed together in a large bowl
Beat the two large eggs in a different bowl
Then add the almond milk, chopped spinach, and a pinch of salt and pepper
Add the dry ingredients to the wet mixture and stir them together until they are well mixed
This will make a smooth batter
Warm up your waffle iron and use cooking spray or oil to lightly coat it
Put the waffle batter into the iron that has already been heated, and cook them according to the directions on the box until they are golden and crispy
It takes about 4 to 5 minutes most of the time
Set the pan over medium heat and heat the olive oil while the waffles are cooking
Put in the mushroom slices and cook them until they get brown and soft
Add pepper and salt to taste
Fry 4 large eggs in a different pan until they are done the way you like them sunny side up or over-easy
