Ingredients:
- 1 sheet of store-bought puff pastry
- 2 medium potatoes, thinly sliced
- 1/4 cup pesto sauce
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh basil leaves for garnish
Instructions:
Turn on the oven and heat it up to 400F 200C
Put the puff pastry sheet on a baking sheet that has parchment paper on it
Spread the pesto sauce out evenly on the puff pastry, making sure to leave a little space around the edges
Place the potato slices on top of the pesto in a way that they overlap
Add the bell pepper slices on top of the potatoes
Put some olive oil on the vegetables and season them with black pepper and salt
It will look like a galette if you fold the edges of the puff pastry over the filling
The pastry should be baked in a hot oven for 25 to 30 minutes, or until it is golden brown and crispy
Take it out of the oven and let it cool down a bit before you serve it
Before serving, sprinkle with fresh basil leaves
