  • 1/2 cup baby spinach leaves
  • 1/4 cup marinated artichoke hearts, chopped
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup cream cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

In a small mixing bowl, combine the chopped artichoke hearts, shredded mozzarella cheese, grated Parmesan cheese, cream cheese, garlic powder, and a pinch of salt and pepper

Mix well to create the spinach and artichoke filling

Heat a skillet or griddle over medium-low heat

Butter one side of each slice of bread

Place one slice of bread, buttered side down, on the heated skillet or griddle

Spread a generous amount of the spinach and artichoke filling onto the bread slice in the skillet

Layer the baby spinach leaves on top of the filling

Place the second slice of bread, buttered side up, on top of the spinach leaves

Cook the sandwich for 3-4 minutes on each side, or until the bread is golden brown and the cheese filling is melted and gooey

Remove the grilled cheese sandwich from the skillet, let it cool for a minute, then cut it in half and serve hot
