Ingredients:
- 1 cup quinoa, rinsed
- 2 cups mixed vegetables bell peppers, zucchini, cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled
- 2 tablespoons balsamic vinaigrette
- 1/4 cup fresh parsley, chopped
Instructions:
Preheat the oven to 400F 200C
In a saucepan, combine quinoa with 2 cups of water
Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed
While quinoa is cooking, toss mixed vegetables with olive oil, oregano, salt, and pepper
Spread them on a baking sheet
Roast vegetables in the preheated oven for 20 minutes or until they are tender and slightly browned
In a large bowl, combine cooked quinoa, roasted vegetables, feta cheese, and fresh parsley
Drizzle balsamic vinaigrette over the salad and toss gently to combine
Serve the quinoa salad warm or chilled
