Quick Vegan Black Beans

A quick and easy way to cook black beans from scratch without having to soak them first.

Ingredients:

  • 1 cup dried black beans
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste

Instructions:

Run cold water over the black beans to clean them

Black beans, water, onion, garlic, bay leaf, cumin, and paprika should all be put in a large pot

Once it starts to boil, lower the heat and let it cook, covered, for about an hour, or until the beans are soft

To taste, add salt and pepper

Hot is best

You can put it on rice, in burritos, or as a side dish
